Cast iron has genuine advantages for Indian cooking: even heat retention for slow-cooked dishes, natural non-stick once seasoned, and a meaningful iron contribution to food. The trade-offs are weight and the upkeep of seasoning, which is where most of the real differences between products show up.

Pre-seasoned vs raw cast iron

Pre-seasoned cookware arrives with an initial oil-baked coating already applied, usable (with light additional seasoning) right away. All three products below are sold pre-seasoned.

What actually matters when buying one

  • Thickness and weight: thicker cast iron holds heat more evenly but is noticeably heavier to handle, especially for a kadhai you'll be lifting and tilting.
  • Handle design: a helper handle on the opposite side makes a real difference for anything above 2kg empty weight.
  • Surface finish: a smoother cast surface seasons more evenly and releases food more easily than a rough, porous one.

Frequently asked questions

Is cast iron cookware actually better than non-stick for Indian cooking?+

For slow, even-heat cooking (like a proper dosa crust, or a kadhai curry), many cooks prefer cast iron once it's well-seasoned. It's not a strict upgrade though, non-stick is lighter and needs no seasoning maintenance.

How do I season a new cast iron pan?+

Wash it, dry it completely, rub a thin layer of neutral oil over the whole surface (inside and out), then heat it upside down in an oven or on a stovetop until it stops smoking. Repeat 2-3 times before first use for raw (non-pre-seasoned) cookware.

Why does food stick to my cast iron pan?+

Usually incomplete seasoning, cooking on too low a heat before the pan is fully preheated, or washing with soap and a scrubbing pad that strips the seasoning layer. Re-season if this keeps happening.
